Russia can be proud of yet another contribution to the history: according to many cookery historians the Russians were the first to add a slice of lemon into a cup of tea and such tea became known worldwide as the Russian tea.Surely, serving tea with fruits, among them citrus, is a fairly popular phenomenon. In Japan, for instance, tea is served with sour orange, and in the Arabic world it is served with grapefruit. But only in Russia a duet of tea and lemon was imagined.

Most likely it happened in the last two decades of the XIX century. Such conclusion can be drawn when looking through cookbooks of that time. “Guide to Cookery Arts” by Radetsky, published in 1877, clearly states that only sugar and cream (English-style) can be added to tea, but in 1898 the next republication of “A Gift to Young Housewives”, cookery Bible by Elena Molokhovets, mentioned lemon as desired (and necessary) component of the tea table.

Perhaps, the world will never know who was that pioneer to add a slice of lemon into strong flavorous tea: was it a rich merchant of Moscow, an aristocrat of Saint-Petersburg, a gold miner of Ural, or a shipowner of Volga? In the end it does not matter as much as the fact that today we know how great is a strong deep spicy flavor of black tea completed with refreshing lemon notes.
